Le Coyote borrows saloon codes only to move them elsewhere. Wood, swinging doors, fringe, low light and a country soundtrack shape a warm room, carefully kept away from caricature.
Behind the strong identity, the place stays simple: eat, drink, gather, and feel welcome.

After six years as Gramme 3, 86 Rue des Archives is reinvented in 2025. Marine Gora turns the café-canteen into Le Coyote: a queer saloon, a wine bar and a place where food still sits at the center.
The shift is more than décor. The rhythm, the menu, the drinks, the soundtrack and the evening experience are rebuilt around a new identity.

Before Le Coyote, Marine Gora had already made 86 Rue des Archives unmistakable. In transforming Gramme 3, she doesn’t erase that history: she takes it toward a more nocturnal, more personal address, aligned with what she wants to defend today.
Her cooking stays free — shaped by family memories, Vietnamese influences, coffee-shop culture and a recent pull toward smoke, chili, corn, sauces and American culinary codes.

Le Coyote was imagined as a place for the LGBTQIA+ community and its allies, giving as much weight to welcome as to the food and drinks.

The menu borrows from American cooking, Vietnamese memories and the mood of the moment. Corn, smoke, chili, sauces, vegetables, meats and generous desserts meet without forcing a fixed border.

On Saturday and Sunday, Le Coyote opens from noon with a menu suited to the weekend pace.

The cellar gives an important place to natural wines and bottles made by women winemakers. The selection shifts with encounters, vintages and the kitchen.

House cocktails, vermouths, whiskies, bourbons, beers and alcohol-free drinks stay with the menu late into the night.

Country, rock, indie and pop follow the different moments of the evening.

Designed with architect Sara Guédès, the room keeps traces of the existing space while introducing a glossy butter-yellow lacquer, a custom wooden bar and a few carefully measured Western signs.

A few months after opening, Le Coyote became one of the most talked-about new addresses in the Marais — for its cooking, its identity and its atmosphere.
